Naturally sweet with all its alcoholic richness coming from the fermentation.
Harvesting of the grapes at their optimum ripening point (red sugar 244 g/l), basting them in the racks until reaching 355 g/l of sugars (ºBe 18.2) by dehydration. Destemmed, extraction of aromas by cold pre-fermentation maceration, pneumatic pressing. Controlled fermentation at 18º C and stop of the same by lowering the temperature once they have reached 13º of alcohol. Approximately 135 g of unfermented sugar remains.
Golden yellow, clean and brilliant. On the nose: aromas of ripe fruit. Quince, honey and caramelized fruit. On the palate smooth, glyceric, powerful and well structured. Good sweetness-acidity balance.
