ELABORATION PROCESS
The Verdejo grape is harvest at the end of August, after reaching an optimum level of maturity. Once destemmed, it is incubated in a tank where it is subject to a pre-fermentation maceration at low temperature for at least 48 hours. At the end of this time, it is pressed at low pressures, later is debourbaged and then yeast are inoculated to favor the alcoholic fermentation that also happens at low temperatures. Once the fermentation is finished, we proceed to its clarification and cold stabilisation. Gentle treatments are applied, which is why natural precipitates may appear.
TASTING NOTES
Pale yellow colour with hints of green. Clean and brilliant. Complex aromas to varietal notes typical of the Verdejo grape; High connotations of exotic fruits, fresh grass and citrus notes. Springtime On the palate, sweet entry , long persistence , wrapping and slight saline touch that enhances a well balanced acidity.
