PRODUCTION
Grapes harvested at their peak ripeness (red sugar 268 g/l). Destemming and maceration to extract the aromas then pneumatic pressing. Controlled fermentation at 15º C which is stopped by addition of rectified wine alcohol to 15% vol. and leaving 100 g of residual sugar. A dealcoholization and microbiological stabilization process is carried out, leaving a residual alcohol of >0.5% vol. Very gentle treatments are applied, so natural precipitates may appear.
ORGANOLEPTIC ANALYSIS
Pale yellow with slight greenish tones, clean and bright. On the nose: fresh with hints of honey and citrus fruits. Good sweetness-acidity balance.
CONSUMPTION TEMPERATURE
6º – 8º C.
