WINE MAKING PROCESS
Destemming, grinding, pneumatic pressing, controlled fermentation until the sugars have disolved. The must reaches a natural alcohol volume of 15% and is increased up to 18% vol. and sweetened up to 20 g/l with young Pedro Ximenez. Oxidative maturing for 30 years in American oak barrels to complete the alcoholic richness.
TASTING NOTES
Mahogany colour in the glass with purplish-blue highlights, clean and brilliant. On the nose: very intense with notes of hazelnuts, walnuts and fine wood. On the palate: powerful, round with a hint of sweetness and a very elegant finish.
